The restaurant proposes a themed menu with biological products and typical flavours, bot Portuguese and Madeira’s own.
Viverde Quinta do Furão’s restaurant has just launched a gastronomical novelty that goes by the name of Culinary Experience, taking place on Tuesdays and Saturdays. This novelty comes as a result of Quinta do Furão’s recent association to Viverde Hotels Group, belonging to German tourism company TUI.
Viverde’s concept is based on the premises’ harmony with Nature and the environment. A concept shared with Quinta do Furão, a charming rural hotel located in Santana.
The Culinary Experience involves a menu created by Executive Chef Rui Vieira, while head waiter José Ferreira choses the perfect wine to go with your meal.
Pedro Costa, hotel director, has told Essential that the aim is to make the event “a gastronomical showcase of regional and national flavours, accompanied also by regional and national wines”. The dishes will follow Quinta do Furão’s concept and its great connection to the earth, the surrounding environment and the natural products.
After the aperitif (that can very well be a Poncha, the Region’s trademark drink), a total of four dishes will be served with a specific wine to accompany it and a brief explanation for the wine choice.
The Chef proposes a vegetable cake with fresh cheese and basil sauce as a starter, followed by a scaled codfish fillet and potatoes over a vegetable “caldeira” (a typical kind of stew) and a chicken roll “caçador” style, accompanied by a vegetables selection. Banana pudding is the fnishing touch.
Menus are available for 35 euros per person.
